My name is Shani from Keep it Simple.
I have a strong passion (obsession) for food, health & nutrition, mainly from dealing with intolerances most of my adult life. The sad thing is that this is such a common occurrence these days, but the good thing is we are so spoilt for choice when it comes to food options that make us smile from the inside out.
Many people think that having intolerances limit your choices when it comes to eating, but my view is that it forces us to be creative about what we are eating and fuelling our body with. When I was told I could no longer eat pasta, I found an alternative. When I was told I no longer could eat chocolate, I found an alternative… you get the picture? For me, my intolerances can be summed up by one saying: (cliché or not hehe)… ‘When life gives you lemons’ … Well, life gave me a bucketload of lemons (quite literally) and I had to figure out what to do with them! This didn’t happen overnight- but overtime I learnt to make the best of a bad situation… I learnt to make lemonade (or simple, healthy recipes in my case)!
My website features easy to follow recipes for those who want to revert back to the Simple life. I will also chuck in some ‘simple tips’ to help you along the way.
I feel like I have been keeping it sooo simple as of late! These salads are so easy to whip together and I have a few simple tips to help turn anything you have in the fridge into a masterpiece!
Simple Tip 1: Always have fresh herbs on hand! Adding fresh herbs to salads seriously bring it to the next level. Try adding mint, parsley or coriander!
Simple Tip 2: Smash up your Avo. To make a delicious and simple dressing, all you need to do is cut up your avocado, drizzle salad with olive oil, squeeze of lemon, Himalayan sea salt & pepper. Then stir the salad vigorously until the avocado is coating all your salad ingredients.
Simple Tip 3: Sprinkle & Garnish I like to top my salads with anything and everything! Try adding chia seeds, nuts, seeds, coconut flakes, nutritional yeast and so on!
1 handful of spinach, roughly chopped
1 handful of mint
1/2 capsicum, finely diced
1 spring onion, finely chopped
1 handful grated carrot, broccoli stem & beetroot
Drizzle MCT oil
Drizzle of Aloe Vera Juice
Squeeze lemon juice
Salt & Pepper
1 Handful baby tomatoes, cut in 1/4’s
Chia Seeds to serve
1. Place all ingredients a large bowl, stir to combine. Season with salt & pepper.
2. Place in your serving bowl and sprinkle with chia seeds.
Sweet Potato Chips:
1/2 Sweet potato, cut into chips
1. Toss all ingredients in a bowl to coat sweet potatoes.
2.Place in oven for 30 mins until roasted.
