Keeping Your Dinner Healthy - Keep It Simple Shani X Frank Body – MEXICAN FIESTA STYLE


My name is Shani from Keep it Simple.

I have a strong passion (obsession) for food, health & nutrition, mainly from dealing with intolerances most of my adult life. The sad thing is that this is such a common occurrence these days, but the good thing is we are so spoilt for choice when it comes to food options that make us smile from the inside out.

Many people think that having intolerances limit your choices when it comes to eating, but my view is that it forces us to be creative about what we are eating and fuelling our body with. When I was told I could no longer eat pasta, I found an alternative. When I was told I no longer could eat chocolate, I found an alternative… you get the picture? For me, my intolerances can be summed up by one saying: (cliché or not hehe)… ‘When life gives you lemons’ … Well, life gave me a bucketload of lemons (quite literally) and I had to figure out what to do with them! This didn’t happen overnight- but overtime I learnt to make the best of a bad situation… I learnt to make lemonade (or simple, healthy recipes in my case)!

My website features easy to follow recipes for those who want to revert back to the Simple life.  I will also chuck in some ‘simple tips’ to help you along the way.

How to adult properly…. 1 Hour Dinner Party – MEXICAN FIESTA STYLE

Your friends will think you have been slaving away all day in the kitchen when they come over to see your masterpiece… Remember to place your face in front of the open oven for 3 minutes before your guests arrive so it looks like you have been working hard. Add a little bit of food on your clothes & face for extra effect!

Guests can either build a mexi bowl, fill a taco or build a bridge and GTF out…

To master adulthood – simply add the following to your mexican fiesta:
•Vodka … but you already knew this!
•Sliced Radishes
•Chopped Chillies
•Chopped Coriander
•Corn Chips
•Cooked Quinoa or Brown Rice
•Corn Tortillas

Baked Mexican Chicken

Serves 4

MexicanThis tastes like heaven, a gift from god that has been baked to perfection & seasoned by the great man Frank himself… Pro tip… if you bake anything, your pretty much an adult. Kudos to you!
•4 chicken thighs
•½ can of black beans – drained & rinsed
•½ can of corn – drained & rinsed
•1 small zucchini, cut into ¼ rounds
•½ red, green & yellow capsicum, diced
•½ red onion, cut into strips
•1 tin of tomatoes
•Salt & pepper
•½ teaspoon cumin
•1 teaspoon smoked paprika
•1 small handful of marinated jalapenos
•½ cup of cauliflower rice (Optional)

Simple Steps:
1.Preheat oven to 180 degrees.
2.In an ovenproof dish, add all vegetables, tinned tomatoes, chicken & seasoning.
3.Use your hands to combine & ensure all the seasoning has coated the chicken.
4.Place in the oven for 30-40 minutes until the chicken has cooked through.

While chicken is in the oven, we start to prepare our sides!

Sweet Potato Chips

[Insert stereotypical health enthusiast female (aka me) talking about the benefits of complex carbs to justify the fact she has eating a whole sweet potato]
•1 large sweet potato, cut into chips
•Drizzle olive oil
•1 teaspoon smoked paprika
•½ teaspoon cumin
1.Place sweet pots in a large bowl, drizzle with olive oil & add seasoning. Use hands to massage through until all chips are coated.
2.Place in oven with the chicken until cooked through.

GUACAMOLEHoly Guacamole

When you can afford to buy a house, or smashed avocado… make guacamole.
•2 avocados
•½ red onion, finely diced
•½ juice of lime
•Coriander – Optional
1.Place avocados in a bowl use a fork to smash!
2.Add remainder of ingredients & stir to combine.
3.Set aside until dinner is ready!

Pico De Galo

More fancy mexican words to boost authenticity in La Cucina! Also mix french, italian & mexican words to keep your guests guessing.
•2 tomatoes
•¼ red onion, finely diced
•1 small handful of chopped coriander


Baked Simple Souffles 

Trick your guests with these simple souffles ( Not really souffles, but drop some big words to your guests and you will have them eating out of the palm of your hand… or your kmart bowls in your case… same same).
•3 eggs
•1 can of coconut cream – full fat
•¼ cup cacao
•¼ cup buckwheat flour
•⅓ cup rice malt syrup
•1 teaspoon cinnamon – optional
1.Your oven will already be on 180 degrees – Place these bad boys in the oven whilst you are eating dinner.
2.Pour all ingredients into a bowl.
3.Using a hand mixer – mix for 2 minutes on high.
4.Pour into souffle dishes & place in the oven for 30 mins. They should have risen and should spring back when you touch them.
