Black Bean Brownies (Gluten & Dairy Free)

Ingredients

2x Cans of Black Beans (Rinse Thoroughly)

1 Cup Oat Flour (throw the oats into the blender until the consistency of flour)2 Tsp Pure Vanilla Extract

½ Cup Maple Syrup

1/2 Cup Coconut Oil (Heat slightly until cool liquid if Solid)

60grams Cacao Powder

½ Tsp Gluten Free Baking Powder

1/4 Tsp Salt

1/2 Cup Dark Dairy Free Chocolate Chips (Not optional. Omit at your own risk)

½ Tsp Strong brewed coffee or decaf (both optional)

Method

brownieCombine all ingredients except chocolate chips in a good food processor, and blend until completely smooth. Really blend well.

A blender can work if you absolutely must, but the texture—and even the taste—will be much better in a food processor.

Stir in Chocolate chips.

Line an 8 inch tin and pour the mixture in and bake at 200 degrees - bake until the top springs back when pressed gently with a finger (approx. 15mins)

Allow to cool for 10mins before trying to cut. If they still look a bit undercooked, you can place them in the fridge overnight and they will magically firm up OR cover and chill the bars in the pan for 30 minutes before removing from the pan and slicing.

Serve them up and see if your guests can guess the secret ingredients!
