OAT BERRY MUFFINS

THIS IS THE PERFECT AFTERNOON OR POST WORKOUT SNACK.

NUTRITION INFORMATION;

If you bake: 7 large muffins the 1 muffin is approximately:

180 CAL - 30g C - 3g F - 9g P

LIGHTLY BEAT TOGETHER

  • 3 Small bananas
  • 2 Eggs
  • 1 Small tub of no sugar yoghurt
  • 1 Tsp. vanilla extract
  • Natural sweetener of choice (I use sugar free maple syrup)
SIFT IN:
250g Wholemeal Flour

MIX IN:

  • 60g Oats (blended)
  • 1 Tsp. baking powder
  • 1/2 Tsp. baking soda
  • 1 Tsp. cinnamon
  • 1 Punnet of blueberries (or half raspberry half blueberry)
  • Dark chocolate chips (optional)

AS ABOVE DIVIDE INTO 3 SIMPLE STEPS;-

  • In a mixing bowl, lightly beat together using hand stick blender
  • Sift in Wholemeal flour
  • Using a large spoon gently mix in the remainder of ingredients, try not to break up the berries
  • Using muffin tins, place the accurate amount in each section (ensure its been non stick proofed prior- try not to use heavy oils) 
  • Bake at 170 degrees for 20-25 minutes 
  • Remove from tray 
  • Serve and Enjoy!
  • Store in air tight container in fridge.
